Greens. He has 20 plus years
experience cooking over charcoal. His recipe is one handed down to him
by his late father Charlie. He uses a combination of hickory and black
oak and cooks it over high heat for about 20 min. From there it's onto
the family secret for tenderizing. This process will enable a person
to cut a pork steak with a plastic fork and creates fall off the bone
chicken. During his 20 years cooking for the public he owned a
restaurant, where he won the golden chicken award. This award was given
by the Broaster Company of Beloit, Wi. for rapid growth, innovation
and quality.
